Or set off on the trail of the lakes and dams of the Black Mountain: there are dams at Saint-Ferréol, les Cammazes and la Galaube, and there are two very different lakes – the wilder lac du Lampy, or Saint-Ferréol which is a resort where you can enjoy swimming, kayaking, windsurfing and other water sports.
During your stay in the Midi, you'll also be able to watch the potters who have been making 'cassoles' (traditional cooking vessels for the regional dish Cassoulet) along the banks of the canal since the 18th Century.
Visit the paper mill at Brousses-Villaret, where they still use traditional methods to make paper from plants and cloth; the Canal du Midi museum, next to the lake at Saint-Ferréol; and don't miss the medieval tournaments and jousting events that take place inside the ramparted City of Carcassonne in the summer!
Also the medieval market town Saint-Papoul, the cistercian abbey of Villelongue and the Cathar castles are well worth a visit.
